Coming from a small scale farm owned by family and friends in Shizuoka, this is a perfect daily sencha, well balanced in sweetness, umami, astringency, and grassiness.
It is recommended by the tea garden to brew this leaf at super low temperatures- 140 F, 60 ml of water to 3 g of tea. That said, feel free to play with these ratios. I prefer a little hotter, a little longer of a steep for a more robust cup.
