Steeping Notes

Consider also cold steeping or hot steeping as you see fit (enter The Warren for steeping hints). The main thing to note is that lower water temperatures create a sweeter flavor profile while hotter temperatures create a more bitter, astringent profile. More water or less tea will reduce the strength of the tea. This tea also turns hot pink with a few drops of fresh lemon!

You may also choose to steep in shorter bursts gongfu style to enjoy a longer session with flavors that open up over time. However, I find this one benefits from a nice long soak myself.

Tea: 3-5 grams. Time: 3-5 minutes. Temp: 93C/200F. Steep up to twice (but the first brews the best!)
